This is an unusual Namban menu using chicken's neck meat, called seseri. Seseri is characterized as being able to enjoy both the light taste of chicken breast meat and the juicy taste of thigh meat. The namban vinegar is made with bitter orange vinegar which is more sour than usual. The tartar sauce has mustard in it as a secret ingredient that deepens both the sweetness and richness. It is a popular dish along with the usual chicken namban which uses chicken breast.
